I appreciate you trying to help. For each channel, one of the RCA preouts is red and one of the RCA preouts is white. Maybe you can get away with only using one of them. I think I'll pass. I think I'd rather pay more and not have to "adapt."
But thats assuming you have all those speakers. 3 in the front, then 1 pointing up on each front speaker. then 2 surround speakers, then 2 "back" speakers. etc etc.
There is no adapting. I have good old 5.1. 3 fronts, 2 surrounds, and a sub. If i added another set of rears, that would be 7.1. If instead i just put in 3 upfiring fronts, that would be 8.1. If i installed another sub, that would be 8.2
Honestly we have way too many speakers these days. 90% of us could get away with 2 really good fronts at a slight angle, a set of surrounds, and a sub...

I am going to upgrade my receiver soon, but I think I'd rather have an amp and a receiver rather than just a big receiver this time.

Most receivers do not.
If it has the usual RCA pre outs for each channel(it's one RCA).
You then need something to convert the XLR on this to a single RCA to make the connection to the receivers single RCA pre out.
The left and right speaker wires are connected to this for each channel.
The 8x100 channels is odd since it's usually odd number channels(5/7/9/11/13).
As someone pointed out it may be they are thinking of someone that has 11 channels and already have a 3 channel external amp for the LCR's.

Would this work to power my speakers and work alongside an avr like a denon/marantz?
What I would like to do is get a basic avr with the latest Audio/video capabilities, hdr, Dolby vision, VRR, 120hz and an amp for power
The reasoning for an amp so that I don't need to get a really powerful avr in the future as hdmi specs change, just a basic new one with pre-outs so I can use use an external amp
I think it would be cheaper this way versus upgrading an avr every few years and needing to get a more powerful one to power and process
