A lot of people keep getting confused by this. This 2.5A is max current draw and doesn't indicate battery life expectancy over regular use. Most of the time in a steam deck or Asus Ally the drive will be idle state once the data is loaded to memory and you're playing your game. You should be looking at idle power draw.

Battery life is definitely affected - max draw can occur at any time depending on how it is used. Idle power draw will rarely ever happen because you're using the device and not everything is in RAM. There's going to be at least some read/write action. All else being equal, the one that has lower (max) power draw will last longer.
I would hold off and or get one from AliExpress. This will drop to at least $90. AliExpress has 2TB for $140. I ordered mines 2 weeks ago and it should be here by the end of the month.

Power draw from the SSD can vary depending on your use case. Just because a drive lists a potentially higher max power draw doesn't mean it will draw this amount of power for a long period of time, it depends on the power state it's in for the activity you're engaged in, and how much data the drive can read/write using that power. For clear results you'd need to monitor nvme power draw for gaming/non gaming sessions for different drives but nobody's done that.
