Some of the new AMD cpus are old cpus from last year, but with a new name.

Definitely want a new AMD Cpu that is the new architecture from this year.

I think the 7x20 are the equivalent of the 5500/5700, the 7x30 match the 5625/5825 processors, 7x35 are the 6600/6800 and 7x40 are the new ones. So, this would be an update of the 5625u

AMD is being sneaky.
The third digit tells you which version of Zen architecture the CPU uses. So this is a Zen 3 CPU, like some of the 5000 series and all of the 6000 series. Performance is comparable [cpubenchmark.net] to a 5600U. Zen 4 CPUs have been delayed a bit and aren't out yet on shipping laptops (not in any significant volume, at least).

Do the lenovos still get insanely hot and use plastic in the wrong places? My work computer, which is 3 years old, is a Thinkpad, but gets insanely hot when doing anything more than browsing. My older Lenovo had hinges that were attached with plastic and behind the screen and eventually went through the screen.

I would have jumped at a lot of these Lenovo deals as they tick a lot of boxes for me - unfortunately the answer to your question is yes, the hinge issue continues so you're rolling the dice.
