This seems like a really cool concept but I'm not interested in sacrificing the possibility for a full color screen and much more flushed out OS (iPad + pencil) for almost the same amount of money.

What are the knock me down benefits over an iPad?

It's not meant to compete with an iPad. It's not the same kind of device. This is eInk. It's meant for transcribing as a main use with also the capabilities of a Kindle e-reader. One use case for example is for people in the legal field who have to do a lot of notetaking.
