For those about to comment on how disgusting this stuff is with it's anti-caking sawdust, hear me out:

Get this stuff for one reason..the best Alfredo ever. When you make your roux you mix half flour and half of the crappy parmesan, slowly whisking both in. It toasts the parmesan and adds an amazing flavor, and it's a hit every time.

If you tell my mother I shared this you'll be sleeping with the fishes, or maybe I will.

People love to hate on this stuff but I actually prefer it to real cheese on pasta. Trash tastebuds unite!

I believe she's pointing out the aggressive defense of the product, despite nobody attacking it.

I worked in Italian restaurants and we never used roux only heavy cream, butter, and cheese

Agreed on the roux, not sure why roux would be in alfredo, though it's a useful cooking technique my grandmother often used, alfredo is simple and doesn't need a roux. Idk, maybe if you are trying to make Alfredo with skim milk you need it?

We use the fake parm in a shaker from time to time when we are lazy. Fresh, grated Parm or Romano (Aldi or Costco has decent ones) is significantly better. If you are taking the time to make Alfredo sauce from scratch (and it IS worth it), then grate some fresh cheese. OXO makes a very nice grater/zester for cheap.

I'm certainly no expert, I've done that too and it's definitely decent.

I am no chef except by necessity, but I suppose the roux is necessary because that's how the sawdust cheese gets toasty 🤣🤣

I get it, and we have this stuff in our fridge to shake on a pizza or something here or there. Any cooking, salads etc, fresh grated parm/romano blend takes 2 minutes and is lightyears better.

I watch many of my friends cook and I'm like, wtf are you doing? I take for granted that my grandmother and parents are good cooks and we ate at home at least 6 nights a week.

I'm waiting for the comments from people claiming the block version is so much better and real, when it really is the same processed crap in the shakey can. It has to have "Parmigiano Reggiano" stamped on it for it to be real (in the US), and that stuff is $1000/wheel.

No one said it, so you said it yourself, just so could share your (incorrect) opinion with the world. Sweet.
