Can someone explain the 122.5lbs of weight and 330lbs of resistance? What is the actual max weight you can feel while chest pressing/curling/etc?

The manuals sometimes have the weights calculations per increment, but you have a single weight stack that 122.5lbs. The pull down is directly connected and maxes out at 122.5lb. The chest press goes through a pulley that ~2x the weight. And the legs/curling an additional pulley that is ~3x.

The weight jumps on the lower part sucks if you are trying to progress with curls. The one I have has increments of almost 30lbs.

You could sometimes rig a smaller plate to the stack or around the pin.

Would this be good for a very basic home gym?
Risk for things breaking and causing injury?

Looks like hot garbage to me. Just look at how he has to lean back on the preacher curl pillow to do a lat pull-down. Angle looks awkward as hell.

Unless you are going to spend over $1k, just get a good set of bands or a bench and adjustable dumbbells. Nobody is going to put on any muscle with something like this. Very limited exercises you can do. Set of bodylastics or similar for $200 would offer way more workout potential than this.
