I've been lookin for a good price on the energy monitoring Kasas.

These are the homekit versions.

Clip the $10 coupon (YMMV) and they are $36, which is $1 less than their lowest price on CCC.

Alternatively, the new matter versions are also on sale.

2-pack has a clipped $8 coupon (YMMV), bringing it down to $32, which is $3 less than the lowest on CCC.

4 pack is also on sale for $55, no coupon, which is the lowest it's ever been on CCC

Been at this price for awhile. I paid $36 last month, and got a used like new set for $30.

"prime day" effect.

Your second link (HS103P4) does NOT have the Energy Monitoring feature.

Which one should I get? I want energy monitoring, remote switching and eventually home assistant one day.

I don't understand the difference, especially between EP25P4 & KP125M.

Seems like a lot of complaints with these things failing.

I have had 8+ running for a few years with no issues (not specifically the energy monitoring version)

I haven't used any of these myself, but based on the reviews, they seem to be compatible with homeassistant.

Looks like only difference from first glance is one included Matter standard for IoT devices. Currently integrations with other systems have to go through Internet, Matter plugs should allow local control from other devices making sure your automations run even if Internet connection is lost.

I 'd like to plug my a 3000w step up voltage converter 110v to 220v to monitor energy use of my espresso machine and also turn it on and off on a schedule, is it the correct plug I need + safe to do so? I assume 3000w step up power converter draws a lot of power

This one: Step Up Voltage Converter 110V to 220V 3000W Power Converter Transformer with Input Power Cable&Output Socket 3000W Lightweight Step Up 110V to 220V Voltage Converter for US to EU Appliances https://a.co/d/9IuMB7f

Thanks

the kasa smart plug supports up to 15amps. So at 120v it can do 1800w max. I wouldn't even go near that number though. If your espresso machine can be under 80% load of 1800w, it's doable.
