Dog food is actually edible by humans, similar rules apply. Just the quality of meat is not as high.
I used to work at a campus that had a poultry unit. Had 2 sections, the layers and the fryers. The fryers are what you see in the grocery store. The layers, once they get over 2 years old and past prime laying age, are sold to places that make dog and cat food out of them. Apparently humans don't like the taste of layers.
My dad grew up on a farm, the layers were the fryers.
