I got in with the orginal deal without any issues. There was a lot of misinformation in the orginal thread, but yes, all you have to do it just activate the phone with the fi app, then take the Fi SIM out and never touch it again (sock drawer it, trash it, etc). You can pop in a SIM from another carrier with no problem. After 120 days have passed you can verify that it's finalized in your fi account > savings > earned. At that point you can do whatever you want, the discount is yours to keep.

I think a significant difference here is we are not getting the storage upgrade for free? I got this deal last time but got the s23 ultra with 512gb for the same price as they are offering the 256gb.

Definitely the S23 Ultra. It's a better phone in every way. The Pixel 7 Pro is really just an upper mid-range phone at a flagship price. The S23+ is also a great phone if you don't want a huge phone/don't need the upgraded cameras.

When you buy the phone from Fi, the SIM will already be in the phone. You'll want to turn it on and go through the setup process and after that you can remove the SIM card. I just taped mine to the inside of my desk drawer to make sure I know where it is but also so no one used it.

Probably a nitpick. You're still getting $500 off. Previous deal, which got probably meant I was saving an additional $100.

When I login it says contact support instead of rejoin fi. Maybe because it's been less than 30 days since cancellation

You must activate the Google fi sim that comes inside the phone, that will trigger the 120 day counter
give it a few days and check that your accounts shows that you activated the sim and the counter is decreasing, 120 days, 119 and so on,
after that you can uninstall the Fi app,take out Fi sim card and put it away, and then insert your desired sim card
if you don't activate the Fi sim, they will deny the promotion and charge you full price of phone
