I watched Bear Grylls do it with bear spray so yeah, I guess it would work in a pinch!
I walk several miles a day with dogs. Lots of loose dogs around so I have fairly regular interactions. I carry a small air horn, gel pepper spray, and a small stun gun. My experience is air horn best, then stun gun, then pepper spray. I can usually make them turn back before they get close with the air horn. The stun gun works great, not on the dog, but just activating it. Most dogs hate that zapping sound. The persistent ones get the pepper spray. Only used it twice in ten years.

I carry spray made by POM. This video and others informed my choice. If gel misses it misses completely and with small civilian size canisters you get about 2 or 3 seconds to hit thier eyes. The big benefit to spray is that it will be breathed in while gel will only effect the eyes with a direct hit. That also means wind can carry spray back to you but that's just a tradeoff you have to make.
Large LEO size sprays can be gel because they have a lot more time to spray and more practice.
Gel is better for indoors or close quarters or windy situation, spray requires less accuracy.

In a real situation every millisecond counts, and when it comes to action twisting knobs in particular ways to "turn off safety" is wishful thinking. In real situation you need something super quick and easy to discharge in a split second.
This one is only for you to feel "more confident" that you're safe.
Look for police type design bottles, designed for real situations

I guess my big fear is incapacitating myself along with the attacker and laying on the ground hoping I recover first!
