there's also a theory/study about if a filter has more pleats, it flows better. I opted for the 3m over the kirkland brand for this reason

It only slows the amount of airflow per minute, and strains the fan to slow it down, not much effect on other, more expensive components. The reason MERV-13 is minimum these days is it filters the wildfire smoke and other carcinogenic particles in much of the US this summer.
Personally I'd go w MERV-13+ for the tradeoff in slightly higher chance to replace a fan. Is your long term health worth the gamble?

A higher MERV rating means it filters more out of a given amount of air. It should be getting dirty faster than a lower MERV filter, and should therefore be replaced more often

While such a sweeping statement warrants a lot of nuance, this is broadly true.
You can compare filters by searching online for the "pressure drop" or "headloss" of the filter in question. For HVAC filters, it should be presented as "in w.c." (inches of water column). The higher that number is, the harder your fan has to work. Said another way, as more pressure is lost across the filter, your cool air won't go as far, and your fan will have to work for longer to achieve the same results.
