Start by letting them play NES and later tell them the Genesis was invented. Keep doing this once a year until you're caught up to the latest generation. My kid is blown away moving from GameCube to Wii right now.
The Penny Arcade guys did a comic about this a couple years back and I was already in deep but it is a blast. I got all the OG consoles and multicarts/ODEs. Wait til he plays the v1 switch with 1TB loaded up.

Q2 Jailbreak mod was also epic and had a grappling hook as well...forgot that until you mentioned it. You'd stop going to your old fav server, move to a new one which was hosting the vanilla mod....then they'd do the same thing within a few weeks. Rinse and repeat. It was funny because the same group of players would basically hop from server to server in unison.
