(this is sarcasm) I have been instructed by the apple mafia of slickdeals to report that the best macbooks to buy are always the ones with the lowest ram because apples now have infinite memory thanks to unified memory architecture and therefore this macbook is not a good purchase

Interesting, when I had 8GB M1 I was always getting memory warnings, and it was slower than the 16GB. Now that i have 16GB its much faster, but i do have a cache in the SSD that is being used. The SSD will wear down with more writes/reads. So if you want to keep that quick I would imagine having more ram would do the trick. I use google sheets a lot and have multiple tabs I keep open. The more i can store in memory the better. I would love to test out the 64GB for that purpose.

I would venture to bet that you won't see a noticeable performance difference however, just maybe the data would already be loaded on multiple browser tabs. So it is a decision of how long you are going to keep the laptop. If you are going to keep it for a year, go with 16gb, but longer and want to maintain SSD life, go higher GB.
