Target lets you return unopened items on your registry for a store gift card up to a year after your kid's birth without a receipt. So if you are gifted a 2nd stroller or see a better deal you'll be able to return it (probably for more money than this current sale price). Just be sure to keep track of which stroller came from which store, since they probably make different model numbers for each store which are essentially the same thing with a different color scheme or other minor detail difference).
Target also gives you two 15% off coupons for any baby item when you have a registry (they say it's for unpurchased items on the registry, but they don't actually care and let you use it for pretty much anything even slightly related to babies).
The coupon doesn't generate instantly though, so create the registry now so you'll have it when you need it. The coupon won't be available until 2 weeks after you've added your first item to the registry AND until 8 weeks before your due date. They don't double check the accuracy of your due date, so you can just make up a day 10 weeks in the future to get the coupon as fast as possible. Once you get the coupon, keep tabs on the price of this stroller and if you see it go on sale again (or something else you like more) you can return the one you just bought and then re-buy using the coupon.
The 15% off coupons are also combinable with other coupons, including the 20% off coupon for car seats and strollers they give each April during their annual car seat trade in event. They publicly announce that you get this coupon for trading in an old stroller, but in actuality they just put up signs with a QR code around the store that anyone can scan whether or not you brought in an old car seat. The employees don't care and happily encourage everyone to do that. They often run really nice sales around this time, so you can get something at a nice sale price minus both the 15% and 20% off coupons!! This even works with items that you ask to price match from Amazon or Walmart.
Next April is probably after your due date, but you'll likely find yourself wanting something else by then because your car seat & stroller needs will keep on changing as the baby grows.

Can you return the gifts given to you through baby registry? And does the refund go back to the gifter or to your baby registry account?
You have up to one year after your event date to return most new, unopened items, including most new, unopened items sold by a Target Plus Partner, at your Target store using your return barcode.
You can access the return barcode on your Target.com Registry Homepage:
Access your Target account.
Visit the Registry page and select your registry.
In the Offers & benefits section on your registry's Home page, select Start a return.
Select a store.
The barcode is only valid at the selected store for the date it is generated on.
Refunds will be issued in the form of a Target GiftCard when using a gift receipt for Registry Gift Purchase Log. If returning an item that hasn't been marked as purchased on your registry, you'll receive a refund in the form of a merchandise return card. Items purchased from Shopping Lists don't have an extended return period and require a receipt or gift receipt for a return or exchange.
In addition, Target Plus items must be returned with a receipt / proof of purchase.
Target's policy is that they will take most returns for unopened items without a receipt and give you store credit (a merchandise return card, which is basically the same thing as a gift card) based on the selling price that day. The return window for this is only 90 days, but they don't have any way to verify the purchase date if someone says it was purchased with cash.
However, it's up to the clerk's discretion and they won't accept it if you're acting rude or sketchy or giving them other reasons to think that you are scamming them. Returning something that costs several hundred dollars will put them on high-alert for obvious reasons.
Doing a return through the gift registry really simplifies things because it's a common occurrence and they just need to scan the QR code without thinking about it too much. You don't need to explain why you don't have a receipt, and the clerk doesn't need to get their manager to approve the transaction.
