nice find, that is indeed a good deal, on a brand that disallows coupons and such for their retailers. also I think the classic line handles are better in the hand than their more expensive Ikon line

For those interested in a quality minimalist setup, I'd recommend building your own set and get a generic block. This would include a 8–10" chef's knife, utility, paring knife, and kitchen shears.

I have all classic Wusthof for $140 after tax/shipping purchased from Cutlery and More in 2017. It's served me well only needing an annual sharpening. This deal would be a good starting point!

they're similar but ops post has the hilt at the bottom of the blade, whereas the costco doesn't.

Advantages of the hilt are: can use it to do some light smacking / crushing and breaking up various food ingredients. Another advantage with a paring like this is that you can push the food with your thumb all the way to the hilt, and your thumb will stop safely against the hilt, the same technique with with no hilt will result in cut fingers/thumbs, unless the knife is very dull. I tend to prefer dull knives for splitting / paring where hands and fingers may be vulnerable. The other option is to get one of those shark swimmer / butcher style protective ring mail hand glove, then it's impossible to cut your off hand.

disadvantage of hilt is that it makes sharpening more difficult, in fact towards the hild it's common to see very sharp knives with the very bottom of the blade dull / not sharpened well. bc it's a real issue Embarrassment

I havent sharpened my Wusthof Classics for like a decade. How you do sharpen the knives?

If you must ask that question, I recommend taking it to a Williams Sonoma or Sur la table and paying them $5 to sharpen it, but make sure they sharpen with a whetstone and not a machine.

If you're not lazy, you can also buy your own whetstone and sharpen on your own if you're curious.

Bought these during Prime Day.

Love them.

But you should definitely get knives for what you need and build a set. I trim pork butts daily. These are perfect. Someone else may need an 8" instead.

I have had my Wusthof 6" Chefs knife and 3.5" paring knife for 33 years (not the hollow/granton edge version), and they are great knives, but I would never buy another chefs or paring knife with a full bolster for this exact reason. They are easy to sharpen, and hold an edge, but you can't sharpen the full edge of the knife because of the bolster (hilt).

I purchased a Mercer M21077 Genesis 8" short-bolster forged chefs knife with granton (hollow) edge 6 1/2 years ago, and it's become my favorite knife, despite being a lower quality knife than the Wusthof. It's more prone to staining, but it's nicely balanced and really holds an edge, and is much easier to sharpen. The granton edge feature is of very marginal benefit for certain types of slicing, but certainly not necessary.

I have that one. The problem is the Santoku in the Costco set is not bolstered. It does not have the thick junction between the blade and the handle. That corner on the Santoku is razor sharp, and a couple times people using mine have cut themselves on it. (including me who knows it is there).

I would recommend the Amazon deal, because the 6" knife is fully bolstered, and much safer.
