Can't stand a full bolster IMO, once you remove enough material from the blade via sharpening you'll never be able to flat cut with the whole knife on the board again.
I've been looking for the Classic Santoku knife ever since I accidentally bought one of their stamped Santoku knives a few years ago by mistake. I have their forged knife set (Grand Prix) and the stamped knife doesn't hold an edge very well in comparison. Looking forward to using the new forged Santoku and donating my stamped Santoku knife.

it's a nebulous concept as some people pretend the bolster and the thick part of it that is right above your knife hand are two different things. they are not different, it's the same piece of medal. furthermore, the handle connects to the knife via the full tang , the handle is not connected to the knife by any sort of bolster. you've either got the classic full bolster that is protective of the user's hand and has some advantages using smaller knives for paring things, but is a hindrance to sharpening. Or you've got the knife that doesn't have the classic western style bolster, where what some would call a 1/2 bolster and some would say no bolster, bc in that case it's just a ring of metal for looks and serves no really purpose other than decoration
I've already got the chef's knife and the nakiri, is it worth getting the paring knife?
100%. If you don't already have one, you'll find that the paring knife quickly becomes one of the most used knives in your kitchen. I have that same knife (but in white) and it's super nifty. I most often use it for deboning meat and deseeding fruits.
This is not a deal, but if anybody uses their knives a lot then Williams Sonoma will engrave knives with your monogram. I bought my girlfriend and I matching Ikon Classics a few years ago for Christmas and had them engraved with our monograms for $5-10 each.

I am super bummed I missed the 8" Chefs Icon line, which was a screaming deal. I picked up the 8" chefs classic as I left mine at an AirBnB and have been missing it.
