Turn off the auto-schedule/ECO mode. Problem solved.

Is this the Nest thermostat that is Matter-compatible?
I can't speak to the Nest thermostat, but I recently installed the Amazon thermostat. It's very simple. There are only 3 physical buttons on the front (that you can't see) but setup is very simple. Like most Amazon products now, you scan the QR code and then the videos walk you through it, so set up is a breeze. Also easy to control the temp through the app, and it's very responsive.

I also bought a new HVAC unit, and it turned out the Amazon t-stat I bought didn't work with my 2 heat/2 cool unit. (unit was too advanced for the t-stat) But before we got to that point, I spoke with the Amazon support (which was actually really helpful), but when it went beyond them they transferred me to Honeywell. Honeywell actually makes and supports the Amazon t-stat. And they were great.

The Amazon t-stat I picked up was a reconditioned one from Woot for I think $30. Check Woot or Amazon's warehouse if you're going that direction. The 2 stage t-stat that I ended up getting was from Honeywell, (they suggested 4 options) and it usually is $180 and I found it on Amazon Warehouse for $65 in "Like New" condition. I haven't installed it yet, so fingers crossed!

I have asked opinions from 3 different HVAC companies, and each one has said that Nest are a huge pain to work on. Not a single one has recommended them. They're great when they work...but if they need servicing they are awful.

That's just my experience, and hopefully you will get some first hand info on the Nest from other owners.

BUT what really is horrible is it wants to save you money, regardless of what you want. After multiple phone calls, they admitted it has a 3 degree temp swing before it turns on. Saving money is a PRIORETY over comfort. Put on more clothes. Take them off. Repeat. Nothing like having a party when everyone is uncomfortable!

I haven't seen them advertise the shenanigans it does. Probably wouldn't sell and they know it.

Now if you are gone all day, you may love this. Only a pain for a few hours before bed. We are retired and are home most of the day.
I have had the opposite experience, had the most expensive Ecobee and didn't like it, saved me no money, maybe cost me more money. Put in the Nest 3rd gen and it's been running great. I bought the C wire kit because it was supposed to need one but ended up returning it because it's running fine without it, always at a consistent 3.9 volts for the most part. I have a couple of the additional sensors too on the other floors. Most of my engineer/tech friends have Nests, I offered my one friend my Ecobee and he said no, he will keep his Nest.

My utility company gave these away for a dollar with no on demand access required. My utility company doesn't even have an on demand program.

Honestly at this point, I'd stay away from nests. I have a few, they look great but are also very annoying.

I am a Nest user (I have 2x the E thermos in terms of this thread), who was then became a Gold Product Expert, then left about a year later (another story). In my time there any issues with perceived incorrect temp readings was rarely ever due to the thermostat itself. It was almost always incorrect placement (near windows, exterior doors, etc), or the wall it is mounted to acting as a duct for cold/warm air from some other part of the home (basement, attic, etc) so that the temp in the wall is wildly different than the room temperature. Sure, there will be outlier cases people will jump on, but they're just that: outliers.
