One knife expert said that he considers it to be a design flaw. Wusthof feather theirs back a bit but after a couple of years and maybe 2-3 full blown sharpenings, you have to do that again. In my case, I've got a band-type sharpener and that works fine to grind back the bolster. You are correct; that should be done at the factory as Wusthof evidently do.

Fifty bucks though, this is a lot of knife for not so much money, and an excellent Christmas gift idea.

With the 8-piece bundle being the best deal for these knives, I was hoping to score one with the Amex offer combined with a coupon. The one time that I read the knives were back in stock on Zwilling's site, I checked and they were out of stock already. I went a different route then and looked for a comparable deal elsewhere since a number of sites had these for $199.99 also.

In doing so I found Bloomingdales had them and offered a 15% coupon for first time customers. That combined with 10% back on a particular cash back site gets me close to the same deal.

The interesting thing is that originally the Bloomingdale's coupon didn't work. I reached out to chat support about it and they said it was excluded. I had read through the exclusions not seeing Zwilling on the list so I asked them to show me where it was excluded. They didn't see it either so they manually applied the coupon. I looked at the exclusions while they were doing this and saw what hadn't been seen by the support rep or I which is that "cutlery" was listed. I kept my mouth shut so I guess I got away with one there. Good luck if anyone else tries this.

There's always a chance that the cash back site transaction falls through I suppose. I've never had one fail but I have heard others that have. We'll see. Even without the coupon and cash back it's a pretty decent deal. It's shipped so I'm anxious to check them out.

These are the mid-range brand of Zwilling knives.

They're probably decent, but the Zwilling Pro is the real top-tier. Had my Pro set for 5 years, found a deal for around $260 for the 7-piece set with sharpener and block on Black Friday. Had to sharpen them for the first time about a month ago. Very solid feel, cuts are buttery smooth, full tang blade.

Don't get the cheap tier though, the steel is poor quality and you'll end up hating them.

i've had a full set of these knives for years, and they constantly dull on me. i've had them professionally sharpened several times but they always seem to cut poorly to me. i'm assuming i'm assuming I am the problem here - as a professional, any advice on how often they should be sharpened, how they should be sharpened, and what I should be doing to take proper care of them? They are only ever hand washed, they are always kept in their block, yet within a week of getting them sharpened I can't even properly cut through raw chicken breast…

Have a few. No problems with the blades, but handles seem a bit slick at times and don't have a great grip.

Damn, wish bread knives were on sale. Target is a joke when they come to misrepresenting MSRP and 'sales'. Nice they matched the ones on actual sale, but they lie about some of the others being on sale.

The 20% off coupon they sent to my account worked fine for me. I ordered one on Saturday with 20% off coupon and it is currently being processed for shipping. If you were BBB reward member previously before overstock took over, they may have given you some welcome rewards. Just check your account. In my case, I was surprised to find $20 rewards. So I actually only paid around $5 total out of pocket. This knife makes a great Xmas gift. I have been using this same paring knife in my kitchen for years and given it as gift multiple times in the past.

Here's the exact truth. victorinox fibrox line can be very sharp, in fact it's a bit harder to sharpen a forged knife to the same level of sharpness because the stamped knife has a thinner spine to begin with (must remove more material for some crazy japanese 10-13 degree blade sharpness. HOWEVER...these Zwilling are thicker forged knives (and I think they havefull tang), making holding them and using them more pleasant than a stamped set.

If you like to pair tomatoes, peaches, pears using the "thumb pushing fruit towards the blade" technique, then you either want to use a dull knife (fine for paring soft fruits but won't cut your thumb) or if you love sharp knives and want to use that technique, then this design is the one that will make complete cuts/splits without cutting your bare thumb:
