While it is a good knife, I HATE sharpening these because of the THICK part at the back of the blade. They should have grounded the back end of the blade and just leave the handle part to make it easier to sharpen.
I like the 8" chef's knife but my wife prefers 7" Santoku.
EDIT: "bolster" is the word I was looking for.
The bolster is there for the home cook vs the pro model which doesn't have the full bolster.
I need a knife to cut thanksgiving turkey. I have the victrinox that everyone raved about 5 years ago. Maybe that needs to be sharpened, but would like to give the family a choice on carving.
I bought a few "4 piece" Zwilling 4 star sets as gifts on a SD from a few months back that included the 8" chef, 6" carving and 4" paring with a gimmicky self sharpening block and a surprise bonus of wonderful kitchen shears all for $76.50. Incredible deal, everyone happy with the knives. I have some old Zwilling pros that I slightly prefer and some old 4 stars that are actually a bit heavier than the new ones (weighed them) and I still love an old Victorinox 8" chef that was a steal and is still great when sharp. The new 4 star is an excellent knife. Always handwash and they'll last forever.
