Take a look at the website - rtings.com. They do a ton of TV testing and break everything down in easier to understand teams and have a bunch of tools to help narrow the search. I don't think this Hisense is any good.

Understand that I'm an old guy & know next to nothing about the fancy TV sets these days. I grew up in the '50s when all TVs were plagued with horizontal & vertical roll, with adjustment knobs accordingly, and the largest I recall was 21" and seemingly weighed a ton. This appears to be a real SD. Repped.

I bought a 65 inch from Walmart a few months ago. Delivered perfectly fine. The package was well secured in styrofoam from the manufacturer. Ymmv

Can anyone speak to leaving recent roku tvs offline? Do they just work w/o begging you connect them?
Yes, you can leave a Roku TV offline and still use it. I have 2 smart TVs and rather than use the installed Roku, I prefer to use a Roku Stick in each of them. I won't go into the reasons why. It's late and I'm too tired.

How does this compare to the Costco 75 Hisense for $500?

Damn at this rate I'll have a TV in every room of the house.
I don't have curtains anymore, I just string a few TVs together over the windows.

I also started phasing out my cutting board and serving trays in favor of old 17" flat screens.

I wish it were Android TV instead.
I liked the premise of Android TV but have always had Roku until recently, when I went Android...and I'm not a fan. Maybe I just got used to the Roku interface but I feel like it's so much easier to navigate, the ads are always off to one side and aren't intrusive whereas Android TV feels like it's slightly different every time I turn my TV on... Just makes navigating a little less convenient

I've had a 65" R series Hisense in our beach house gor just about 5 years now.
65R7050E1. Paid $349 for it. It's been outstanding but ever 1-2 years I've needed to clear the cache which is essentially a factory reset. No huge deal but kind of a PIA as i need to add my apps, passwords,etc...
I would think the newer versions have upgraded software so a reset isn't necessary.

I have bought many TVs from Walmart. Never had an issue with cracked screens.
Same here. Just got a 75" a few months back and it arrived just fine.
