Economy Plus is available for purchase as an add-on, you'd get either an exit row/bulkhead seat with more legroom, or something in the front of economy with more legroom/recline.
This is infinitely better than Southwest. Premium Economy (Premium Plus) is usually 2x the cost of regular economy, but with this deal it is closer to 3.5-4x the cost. Whether you want to splurge for the upgraded service is up to you, I just flew Premium Plus LAX/HND a week ago and for some it is worth it, in my case it was a play to try to get a Polaris upgrade via miles.
ultimately the comfort question is up to you, there's a lot of reviews comparing UAL vs AA vs DAL vs ANA vs JAL vs SIA economy class seats.

I've never flown that far, usually fly economy when I fly across the US (mostly Southwest), and so I'm looking for opinions about jumping on this vs springing for the more expensive flight.
It will be my first time to Japan, and I'm excited. I don't want it to be ruined by a bad back when I get there! Heh.

yes, Japan in Feb is cold. lots of places to see that has snow, plus an onsen experience in a snowy destination is a bucket list trip.
hell, even Meiji Shrine covered in snow is a glorious sight.
