I think they deduct the gift card amount before giving the 5% off. So it'll be $80.75 and not $80 (assuming you treat the target GC's as cash)

There's no tax when buying gift cards. Tax will be applied at the time of the purchase of a product and then the giftcard is used as a tender type.
