I'm sure you make it do something with FlexOS
Turning off S Mode doesn't change performance, it just allows for non MS-Store apps to be installed. There may be other protection mechanisms in place once turned off that may slightly hinder performance or something (although I'm just speculating here), but I need my other programs so I don't care.
The point of these machines is to have a machine to toss around and not care too much about. I baby my gaming laptop but throw the tablet onto the bed without a thought.
I must reiterate though that this deal is garbage and the n6000 is really the bottom, performance wise, that I would buy and consider it to be useful. The n4020 is really bad. With tempered expectations, I did buy this (https://slickdeals.net/f/17061940-lenovo-ideapad-1-15-6-laptop-intel-pentium-silver-n6000-1080p-windows-11-s-mode-microsoft-365-personal-1-year-subscription-150) and it's not a bad performer with another 4gb stick inserted (for 5 bucks off amazon, lol) but I miss USB-C charging and USB-C video output, which it lacks.

you have a link for the $5 4GB stick?

I figured for this machine's use case, it didn't need more than that. I just now noticed that this page says its 2666mhz in the product details and in the images, but on my actual system it was 3200mhz (downclocked to 2933mhz because of the built in ram on the laptop).
