Yes, the P1P and P1S are incredibly attractive...if all you want to print are toys that soften in the sun. I'm into practical prints that can tolerate the outdoors and,, unfortunately, both printers are hamstrung with the artificial max bed temps (100). I prefer to use ABS and the 100 is the minimum I need to prevent warping, much less adhesion. Sure, I can jump through hoops to make these two printers work but then, I can do that for less money on my enders.
In regards to time, I'm not a print factory and can wait, especially to maximize layer adhesion for said functional parts.
What I would do is wait for the next iteration when parts will become more available and someone cracks that nut and allows us to manipulate the temps however we want. Until, I'm pressing the pause button.
I spent an entire week straight printing PETG parts on it preparing a drybox and some upgrades for my Prusa XL 5-head, which I'm now back to tinkering on since the firmware/slicer are pretty alpha.
Keeping a close eye on Bamboo deals just in case, but just wanted to note how impressed I've been with some of the newer entry-level machines coming out with things we never had in the old days like auto-bed meshing.

I'm actually pondering buying an Ender 3 as an entry to 3D printing.
What's the one think you don't like about the V3.
I have an Ender 5 S1 at home that supposedly can print as fast as the p1p (250mms) but it doesn't even get close. The P1P is blazingly fast and have very few mishaps.
However, the AMS wastes a decent amount of filament in addition to printing a purge-tower for each color change in your print (so if your color change is in the top of the print, it'll print a tower up until the last color change.). I have played around with the settings a bit but it doesn't seem to make much of a difference.
If I was to buy another printer I would get a P1P with the AMS,but note that the AMS can't print soft filament (TPU) and it can't mix Petg with pla in one layer.

I can't imagine not using the AMS... I use multiple colors on damn near everything I print.
Disclaimer: Make sure you have a very solid surface to set the printer on, this thing is a Tasmanian Devil when printing at full speed. Oh and have LOTS of room for filament spools and vacuum seal bags. I assume I'm not the only one with dozens and dozens of spools of different colors stacked up.
The new Ender 3 v3 +Raspberry pi with Octoprint. Might be a good alternative for you as the auto bed leveling solves most of the gripes from the original.
New Ender 3 v3 I think has less hassle and a great entry for folks into the hobby.
