NOTE: I am a 9yr Synology and Xpenology user, but I moved to QNAP in 2017. They are pretty much the same, but QNAP offers more powerful/modular/upgradeable hardware at a more affordable price.
NOTE2: I hear Qnap users being a victim of ransomware, but I never had it (I have 2 Qnap that backs up each other). I hope this is not a marketing gimmick of the other. The competition and followers of each NAS (Synology/QNAP) are fierce and too loyal. It's like hearing fanboys of Intel/AMD, Android/iOS, Windows/MacOS, ... For me , both NAS are pretty much the same,,, I've used both and I like both, but I just needed a powerful affordable hardware that Qnap happens to offer.

EDIT: answering my own question, this is apparently possible, but only with Qnaps' own crazy expensive pice card. While some 3rd party cards may work, the software lets you use the drives on those only as cache. Lame, but oh well.
Other people are creative and smart enough to use the included features. You can use its VPN (server or client), Virtual Network, run some dockers (for automation, controllers etc), use Windows VM to hide your tracks on activities like P2P, host your website, run your database, run a virtual PFsense, backup your cloud storage, 24/7 Plex server at blinding speed (if you add video card), act as cloud storage for your phone, home automation, music server, photo server, IFTTT, use to Backup and restore your desktop, surveillance cam as mentioned earlier (your Ring is useless without internet while your QNAP will still record with or without internet).. pretty much you can do almost anything because you can virtualize things. Your imagination is the limit.

Sorry, one last question: what would be the advantage of this over, say, building my own PC and putting the hard drives in it? Not sure how Windows does acting as an OS for a machine mainly used as a NAS, and while I've never used Linux I'm sure there's a distro that's geared towards this.

- Power efficiency. The QNAP will be more efficient especially if you run it 24/7/365

Running 4x 8TB drives in RAID10. RAID5 at these drive sizes is a BAD idea. RAID6 would work, but gives the same effective storage (16TB) as RAID10 and RAID10 will rebuild MUCH faster if it comes to that. Have a cold spare 8TB waiting for when I need it.
As for NAS software, RockStor (my preference), NextCloud, FreeNAS or TrueNAS are easy to set up, and there even more alternatives like OwnCloud, OpenMediaVault, LibreElec, or even ProxMox. Which is best depends on your usecase and the linux flavor you prefer.
If you use BTRFS you can throw any old disks into the mix. I like that even with unmatched drives, the software can figure out how to build a redundant storage pool (though using matched drives is definitely faster). Of course ZFS or mdadm RAIDs are arguably more stable. But for home use with random drives I like the ease of BTRFS.
It all depends on what your hobbies and needs are.
NVM. Looks like that's only for Intel based units. The 431+ has an ARM CPU.
