I don't think Costco people would tenderize steaks mechanically (simply add more labor cost). They usually cut their steaks fresh in bulk from vacuum-sealed whole pieces (usually gone within 1-2 days) while retail stores keep their steaks out on ice for much longer. Therefore Costco steaks appear to be tender and wet. As steak dries and protein/fat starts to degrade, the beefy flavor becomes more pronounced, like aging. I feel you probably will like ribeye cap a lot.

Fact check: I was wrong. They do tenderize most single-cut steaks with blades.

From what I recall, they do mechanically tenderize most of their steaks, unlikely for this though. I believe you can see it on the label as "Blade Tenderized".

Some of the best chefs in the world will all use sous vide. You have been misinformed. It is simply a way to get a perfect temperature (usually medium rare for steaks) from edge to edge. Then you sear it off and enjoy.

Does Costco give full refund if I am not fully satisfied? I don't like too much fat on my meat
Then you should not even think about buying this. It is more than 50% fat.

False. I love SD but I bought 6lbs of A5 Wagyu for $500 'cause I thought I would absolutely love it. I was wrong. I didn't like it. It wasn't bad but it was too fatty and expensive for my taste. Would I have bought it again if I loved it? Hell yeah. My friends and family whom I shared with were mixed as well. Some liked it and some don't, so definitely a matter of taste.
I'm shopping for a gift for friends who like A5, me personally I wouldn't buy such a fatty grade. I generally don't like animal fat dishes that are popular in Asia.

Which method do you recommend ? Boil this or deep fried Wagyu ?
I'm curious about that myself - I usually cast iron pan fry Costco Choice or Prime ribeye or NY strip. Such a fatty meat would probably make a big mess with that method.

Would this be worth roasting like a typical rib roast or would that be a waste? I feel like this might be better off cut into steaks.

Thanks, how are BJ's steaks?
BJ's often gets Prime Ribeye and NY Strip(occasional Tenderloin).
The QUALITY is far superior to Costco, even with the blade mutilization of the prime/choice meat it's tough and stringy.

Costco price/quality is horrible, including cuts/trimming.
Much better cuts at the local publix supermarket for similar pricing(when on sale).

NO to roast.
It would be a ball of lard.

Also, with the amount of fat... you will only really be ablye to consume 1/3 to 1/2 of your normal portion size

Australian Wagyu is far superior to A5 if you want to cook it like a tradional ribeye etc.
Also better than the American "wagyu" version.

Take a look at https://www.easymeats.com/wagyu
(they are local to me) we've tried most of the cuts. The BEST A5 wagyu cut was the picanha.

The best steak I ever had was at a Japanese steakhouse near Toyoto City, Japan.

I've been there many times. They have a cheaper option which is sometimes recommended over the more expensive steak, depending on factors I don't really understand. This shows me how honest they are though. I go with their recommendation and always get amazing, delicious, mouth-watering steak. I overdid it last time though, and ate so much that I did not want any steak for quite some time afterwards. Too much of a good thing is real! laugh out loud

On average it's only $70 to $100 per person for amazing steak. The same steak in Tokyo could cost hundreds of dollars, but due to the somewhat remote location near Toyota City, it was a bargain. Their steak is much better than Peter Luger at its finest in NYC, known to be one of the best steak houses in the USA, which is still very good steak but has declined a little in recent years.
