So your three handle choices for this blade style (full bolster, Sigmaforged, Fridour Ice-Hardened, classic blade profile) are:
Four Star - Polypropylene Concealed Tang
Professional S - Novodur Full (visible) Tang
All Star - Novodur Concealed Tang, Ergonomic
The Professional S is their line designed for professional chefs in commercial kitchens, Pro is targeted a little more towards professional chefs at home.
If you go to the Pro line (not Pro S) you get a curved half bolster vs the full bolster on the Pro S. Some find this bolster more comfortable. The Pro line also has the Novodur full tang handle. The chef knife blade profile on the Pro is a little different with a flatter spine and more curved belly. The Pro line is their second most popular line behind Four Star.
The Pro Holm Oak is identical to the Pro but with an oak handle.
The Four Star II is the same as the Four Star but with a metal end cap on the handle.
These are their top of the line knives. From here you either go up to the luxe lines with damascus steel or ebony wood handle at $400/knife or down to the budget and then economy lines, budget lines are german-recipe steel stamped and assembled in China and economy lines are assembed in vietnam, china, spain, etc from who-knows-what lol.
