The pixel phones are usually good. The free smartwatch is kinda meh tho, it's not the same value as a Samsung or Apple.
I personally won't trust the pixel smartwatches because Google is horrific with abandoning new product lines that people invest into (nexus tablets, stadia, Google print, Google play Music, etc). When I get my Samsung watch or apple watch, fitbit, or whatever brand smart sports watch, I know that in a few years I can get a refresh that can restore my backed up settings. Meanwhile I wouldn't be surprised if and when Google decides to randomly stop creating pixel watches, and leaves that mini eco system completely deserted.
They were too lazy from the start to make a real competitor to the apple watch and piggybacked off of Samsung into doing the work for android wear.
Seems like a decent deal (especially compared to any other pixel 8 offers I've seen). Have been considering the mint pixel 7 pro deal since it seems worth the money. Not sure if a $500 difference is worth upgrading to the 8 pro plus the watch. I have a Fitbit charge 2 so I wouldn't mind the upgrade. Since Google owns Fitbit I'm assuming it's a decent enough replacement.

Yes, it's in terms. In reality does Mint locking these phones?
I have an 8 pro and the watch though not from this deal. I had no interest in the watch but I find myself using it way more than I expected. The phone is pretty great too. Very happy with the purchase. The Tensor g3 chipset isn't as strong of a performer as the snapdragon or Apple chips, but I don't notice any real effect on day to day usage coming from the last gen snapdragon on my prior android phone. It does everything I need it to do very quickly and efficiently. Battery life is decent but not great.
