A quick Google search showed that a lot of people are complaining about this issue with the Ultra 2 and the Series 9. With the most recent update (watchOS 10.2) the issue still isn't fixed. Apparently Apple is aware of the issue and hopefully another software/firmware update will fix it soon. Just FYI.
And no Apple does not consider this an issue and it won't be fixed unfortunately.
I wear this watch every day. TO me this is more of an all around sort of thing feature wise. Can a Garmin take a call or answer a text or similar on a run? The fitness features. I use this with Apple fitness. All around a 10-10. The yearly updates on these watches are nominal. Thats clear. Ill give you another example. I travel the world. I can use the watch for directions without pulling out a smartphone and looking at the screen as I walk. My wife CALLED me in the middle of the NY marathon!!!

This is an easy fix. Apple made this feature not to strain your eyes at night. You can turn this mode off.
Hold the watch screen> chose edit> go to night mode> choose off.
I like night mode auto as it's fantastic at night. Low eye strain
My smart watch looks like an Apple Watch, last seven days on a charge and does almost everything except cellular. Oh, and it only cost $24.99

If you turn the night mode off the watch will not go red. I am using the watch for 2 months and no issues so far
