I use nova launcher over stock andriod (pixel) and Samsung latest One UI.
Samsung One UI is getting a lot better from the past version, I can say I enjoy it now too but Im still on nova on my fold5.
Barebones Google Android is good.
What I like about it is the ability to dumb down the UI, limit what user interactions can do to the screens. This way, I am not annoyed by extra UI features by accidentally swiping somewhere or clicking. Keeping the features to a minimum needed, I don't annoy myself by accident invoking something.

It has the most customizations of any launcher. For close family like grandma, I can custom tailor it to their special needs, restrict/hide settings and apps they don't need and then lock the launcher layout so they don't accidenly mess everything up. NovaLauncher widgets have some pretty advanced functions. Definitely fiddle with them if you haven't.
