The difference is dramatic if you are transferring more than a file or two. I buy multiple USB C cables like this for charging but keep at least one better cable just set aside for data transfer. Since those are more expensive, I'll keep that in a drawer and use it only when I need it. Look for a cable labeled 10G or 10Gbps or older cables might say USB 3.1 Gen 2 or USB 3.2 Gen 1x2 or USB 3.2 Gen 2. Something like this [amazon.com].
You can install software to measure your cable's speed but I'll just test new cables by transferring a the same big file between my phone and PC. Slower cables will take 30 seconds. Better cables under 5 seconds.

I am standardizing on the Anker bio 240W for longer cables (3-10'), and then have a few 3-6" high Gbps thick cables for data transfer.
