There's no real benefit to "pro" series cards. Many professionals shoot with some of the cheaper cards, since at the end of the day, the technology is more or less the same as it's been for 10+ years. A $20 Sandisk is going to perform almost identically to this overpriced "pro" gear.

The only difference between this and said Sandisk is the 300MB/s vs 200MB/s read speed. Which saves about 3 minutes when moving 128GB of data from the card to a computer. Is that really worth an extra $100 on sale, let alone the absurd "regular" price?

This is a dumb take.
Comparing a uhs-i to a uhs-ii card.

This is true, they are different generations of UHS. However the vast majority of folks aren't really going to need the extra read/write speeds. Unless you're producing film, shooting 4k, maybe even shooting sports with continuous burst, it's really overkill for the price. I've been shooting professionally, and as a hobby for many years. None of my fellow photographer friends or colleagues use "professional" grade cards.

99% of home consumers UHS-I cards @ 90MB/s write speed is way more than enough. For some pros doing studio portrait or lower demand use case are fine with normal UHS-I.

However, if you're a serious pro doing sport/wildlife, high resolution/bitrate/fps video or what not etc that UHS-II can write 3x faster @ 260MB/s is needed.

I'm no pro, but some of the best shots of my toddlers were taken during 10 fps bursts, and yes, I do use UHS-II cards because I can clear out the camera's buffer quicker to shoot more shots. Each RAW picture is 80 MB, and at 10 fps, the camera is capturing 800 MB/s. Comparing the performance of a UHS-I card to a UHS-II card is a joke.

When you don't know why you would need the write speed then all hope is lost.
