It's certainly more flexible than a equivalent TV - but it's a shrinking market.
While larger real estate TV's are becoming more and more affordable, which also helps that market, the projector market is not shrinking. It's growing.
But having the screensize/space I do in my basement (I have an EPSON 6050UB), the picture quality is still excellent, and the massive real estate I have for it...I just don't want to watch a movie on a small screen.
But to each their own.
Having seen oled, i do understand why you prefer oled over projector. However, sitting 6' from a TV to get the same view as a projector is just weird. I tried that and it just doesnt work. The feeling is not the same. There is no space, cant stretch or lying fown with 6 feet from the TV, it also messes with furnitures arrangement.
As for me, I have a big OLED at the foot of my bed and I much prefer watching a movie there than in my big home theater screen. Comfortable, immersive, and most importantly picture quality that can't be rivaled with any projector.
As an analogy to the mind tricks, if you take 2 TV's with the exact screen size but one has a big thick bezel while the other has a thin bezel, and you showed it to a person who doesn't know the screen size, most people will tell you the thick bezel TV is a bigger TV despite having the same screen size (yes, i know, this despite most people hating thick bezels for cosmetic reasons). Just ask the people who transitioned from their thick bezel plasma to thin bezel LED. It's just a mind trick that over time people were able to overcome.

You said it yourself, you place the tv at the edge of the bed, I dont think a group of family with 4+members/friends want to watch a movie or night game from your bed just to view better picture quality. If you look at most house arrangement, they have their sofa place around 2/3 of the room or around 10 feet away from the wall/TV. It is the most pleasing arrangement for most homes.
What about speakers arrangement? How can we arrange an atmos setup with 11 speakers plus a massive subwoofer within 6-10 feet of a TV. Those towers surround speakers are absolute eyesore when placing in the middle of the room to accommodate surround arrangement. Also the overhead atmos speakers, it would totally destroy the purpose when placing them directly on top of the front 3 speakers. As you can see, this is what I mean by physically impractical in a real house with a family.
I have a TV in most bedroom rooms of my house; but a projector has its place, a very good compromise from a TV screen for its massive immersion experience in a large room for a large group of people. You cant have a family of 4 having the same immersive viewing with an 80" TV. TV can win in all categories of color/quality/day time viewing, buy it cant deny the benefit a large screen can offer, the flexibility and comfort. Until manufactures can make an affordable 120" TV, projectors are here to stay.
