Unless you own the original games, running these with an emulator isn't technically legal. So what you're asking is why should someone buy these games when they could pirate them instead.

What someone does is up to that individual, but bundles like this exist for at least two reasons: 1) so a company can make money, and 2) so people have a legal way to play these games without having to have original cartridges and systems.

^Hopefully the arcade versions of the Ikari Warriors games are indeed included, as they are significantly better than the NES versions.

Only if you had an SNK Neo Geo system at home; then it was superior to anything from Capcom at home. As for the arcade, Capcom's Street Fighter series are by far the greatest fighting games of all time. Neo Geo had some amazing games like the series for Samurai Shodown, King of Fighters, Art of Fighting and Fatal Fury.

Convenience (it's not easy to get emulators running on switch) and legality (whoever's selling this owns the rights to these titles. Wherever you'd get roms probably doesn't).

Supporting the company who creates the content is important. I don't pirate anything because I want more content, whether that be games, shows or movies. If I won't pay for it, I won't play/watch it.

Check out ODROID Go Ultra or ODROID Go Super--same size as a Switch but can run several emulators.
