I've been told (by someone that went to culinary school) that stainless bakeware heats unevenly. Not sure if it's true, but generally I've only seen carbon steel and aluminum bakeware.
Normally you have to line these pans otherwise everything you bake will stick. So your food will never touch the aluminum, if that is your concern.

Yes this is true. Copper and Aluminum are much better heat conductors for cooking as they heat up quickly and evenly.
