In no way am I an engineer but I'd say there's a lot of way ways to overcome this hurdle. Say mount a couple 1x4s across the area you plan to install. Screw them to your studs then screw this to them.
Cut out your sheetrock put 1x4 or 2x4 behind and put the sheetrock back.
Cut a 1/4", 1/2", 3/4" rectangle of plywood to screw to your studs then mount this to that. I included all those sizes because it would depend on the size and weight of the TV you're mounting. Though I personally think 1/4" would be more than enough for even an 85" TV, again, not an engineer.
Alternatively to keep the off wall spacing closer you could do the same using a couple 1" or 2" pieces of flat bar steel. Nearly every TV I've mounted I've had to get creative because the mount missed one or both studs to put the TV where I wanted it.

To be honest I just installed this a couple weeks ago (bought 9 months ago). You could center it on a stud and use wall anchors. 2 strong lag bolts will hold a LOT of weight even at full extension. The 4 wall anchors at the corner would just give it a little more support.

Had a buddy of mine who installed TV professioanlly on people's walls. His test was to do three pullups once mounted to ensure it could hold if a kid or drunk adult pulled on it.

Once a tv is actually mounted, the connection between the mount and the wall is not the weak point, the connection between the tv and mount is nowhere near that strong, and having installed a couple of these mounts recently in my house I wouldn't expect these mounts to be able to hold that much weight anyway being full motion. The 65" TCL's I put up with these weigh 31 pounds, I don't need it to support a man doing pullups, nor do I think the 31 pound TCL is engineered to be able to withstand such loads if a drunk man tried that.

Relevant to this post, I would say these appear to be well built mounts with good instructions and good hardware, I would recommend based on my experience.

Yeah I agree. No doubt the stud cant support my 175lb but the actual TV mount itself, specced at 100lb or so, definitely cannot hold me. His friend must be anorexic.

100% - you attach woods to the studs and attach the mount to the wood. Now, my knowledge is at least 15 years old (from my Circuit City days) but it was once in a blue moon that the studs were where you actually want to mount the tv.

Am guilty of doing pullups on TV mounts. Can confirm the cheap rocketfish one from Best buy held me up at 165lbs easily.

Hung my (fairly heavy) 55" Frame and 65" 90C.

I -love- these things since I'm 24' studs here too.
