Cut out your sheetrock put 1x4 or 2x4 behind and put the sheetrock back.
Cut a 1/4", 1/2", 3/4" rectangle of plywood to screw to your studs then mount this to that. I included all those sizes because it would depend on the size and weight of the TV you're mounting. Though I personally think 1/4" would be more than enough for even an 85" TV, again, not an engineer.
Alternatively to keep the off wall spacing closer you could do the same using a couple 1" or 2" pieces of flat bar steel. Nearly every TV I've mounted I've had to get creative because the mount missed one or both studs to put the TV where I wanted it.

Relevant to this post, I would say these appear to be well built mounts with good instructions and good hardware, I would recommend based on my experience.
