Is this good? I have an almost 5 year old that already beat Odyssey (mostly by himself). Would this be good for him?
My kids really like this game, but they are older. Sparks of Hope has more strategy to it than Odyssey. It is also turn based rather than pure action. A 5 year old might not like that. I would find a video to watch to see if it is the style of game your child would like.

Since this game is one of the cheapest "Mario" titles that exists and is always near this price point, my son has done similar things to yours and is now 8 and is LOVING the first in this rabbids series...and is doing quite well. So not too many more years!

Super Mario Brothers Wonder is a great game for all ages. You can play as multiple characters and some of them can't die so it's good for kids starting out. Plus it's enough of the old school mario that I've played it a bunch. And you can play two player with one "leading" and he other helping. All around good.
Highly recommend this game, it's so much fun and hilarious! Would echo similar comments that it's not a typical Mario game and I'd think 10ish or older to play. Not because it's inappropriate but the strategy style may get them frustrated or overwhelmed.
If you're ok with (or prefer) getting a digital edition, Gamestop is offering the Gold Edition (which includes 3 DLC expansions) for the same price. Also the Gold Edition of the first game is going for this price and can confirm the DLC included in that doubles the playtime for the game.

For a 5 yr old I would recommend Mario Wonder, Super Mario 3d world, or Kirby and the Forgotten Land.

Plays nothing like odyssey fyi, definitely would keep a kids interest. Don't spend more than this price for this game. This is not a Mario game
Would not be a good game for a 5YO. Wonder is a good option, Kart another. LEGO City Undercover is great as well.
