I prefer the OLED model at this point but given how much I shop at Amazon this is almost like getting this for $251...very tempting

It's like Newegg deals, when ever companies do bundles like this it's a good indicator of what the price will be in the near future. So in this case it'll most likely be $250.

The switch released in 2017 at $300..... They are selling a 7 year old console for $50 less....

For context to PC, thats like buying an Nvidia 1080ti for $600 right now....

I would highly recommend the OLED version if you've waited this long. I have an OG Switch that's now my daughter's Fortnite machine, and I bought an OLED for myself. The difference is pretty substantial if you know you'll game handheld a lot. You can buy "deck only" OLED Switches on eBay for around $220-$230 brand new that have been parted out from special editions.

You could then buy an aftermarket dock for $20-$30, and your own controllers. I recommend Hori's Split Pad Pro or Compact for handheld and an 8Bitdo for docked; you can get both for about $60, which is still less than one new set of Joycons. (All 4 of my Joycons developed drift.)

We play Nintendo as a family once a month for ~30 minutes. Mario kart, Runbow, Mario Bros, smash Bros. That kind of thing. Is it worth upgrading to buy myself some more longevity or is Wii U we have just going to keep on kicking forever and I should just roll with it? I know this is totally subjective but curious about your opinions. I've heard good things about overcooked and some other games.

I feel like if you've held out on buying a switch this long you should just wait for switch 2, either for second hand cheap switch's or just get the Switch 2 at full price for probably a little more than this on release.

My 7 year old loves playing games on our Homebrew wiiU and most games look better than on switch anyway. I'll get the Switch 2 for the first Christmas after release.
