This sounds very familiar. They say you can try mixing it all up again maybe with a blender or food processor. I'm pretty picky with the consistency of my mayo which is mostly why we switched to Hellmann's, tho it be more expensive than other brands and especially generics. We use mayo all the time so it doesn't sit in the fridge for months, more like a few weeks, but other brands would get soupy toward the bottom and I didn't like that. I say soupy meaning it changed from being light and creamy to being more like a thick liquid.
bought another after getting a deal on the 30oz. should be enough mayo for a long time.
