The only question: If it's worth another $50 to get the (admittedly, orange only) model with touchID (easier logins and authentications), 1/8th more GPU grunt, 2 more USBC ports, and an ethernet port in the power supply (which is surprisingly convenient!)

The best 'deal' is probably open box M1 8 GPU-core (touchID) for $800, excellent condition. That would be worth getting…

Was thinking Mac Mini but adding the extras presumably won't hit this price point.
I'd use a Windows keyboard, and not get the full experience.

There are plenty of other (some free) choices. TeamViewer is another common one.
Apple's tool of choice is Apple Remote Desktop, a paid app, which only runs on Mac, so wouldn't suit for your example. But VNC and TV both would work fine. ARD is essentially built on top of VNC (in addition to a thousand other features it has).
Still very, very nice. But not quite 5k.

You mixed up wattage and voltage. I very clearly intended voltage, as that doesn't mix well with eithernet. Doesn't matter "how far" POE has come, we weren't talking about that. We were talking about including ethernet right alongside 120v/230v mains power.
