I have had a few issues with adding plugs to HomeKit. I don't remember the details of how I resolved my problems, but basically, if you fail to add a plug to HomeKit, you need to completely remove the plug from the Meross app and reset it. Updating the firmware also seemed to help, so if they ship with newer firmware maybe they will be less finicky now.
Anyway, they've been perfectly solid device ever since I got them on HomeKit. No lag, no disconnections, no other issues I can think of. Unexpected plus: I weirdly enjoy the pleasant, soft "click" the relay makes when turning the switch on or off.
