Do not run your nice and expensive knives through this. It shaves up a lot of metal if you are not careful. Combination of honing rods and sharpening stones is always best for expensive knives in the long run. Just my two cents.

You're not supposed to run your knives through all 3 stages every time. You only use stage 1 if your knives are really dull and in bad condition. You recondition your knives using stage 2 (honing) and stage 3 (polishing) for the majority of the time. If you don't know how to work the honing rod, this product is great to keep your knives nice and sharp.

stage 1 is 15 degree, stage 2 is 20 degree, stage 3 is polishing. You either use 1 and 3 or 2 and 3, not 1, 2, 3. German knives use 2 and 3, Japanese knives use 1 and 3. Do not mix them up.

How easy is it to mess up the edge on your knives if you don't really know what you're doing with a sharpening stone? I've watched YouTube videos for guidance, but that still doesn't protect me from overdoing it.

I bought some cheap Kiwi knives to have in the kitchen as cheap utility knives and practice sharpening, but I haven't wanted to mess up their actually decent blade.

In fact, recently bought a couple expensive Japanese and German knives, still hold off using the electric sharpener which I bough a year ago https://www.amazon.com/gp/product/B0018RSEMU . Wonder how does it compare to this one on sale, other than the price.

Have been using it sharping other knives, worked well but did notice some chip away though very small, though doesn't affect the use. In fact I thrown away a $27 amazon chef knife bought in 2012 (https://www.amazon.com/Victorinox...ife-8-Inch) ago and opted for the expensive knives, mostly because the cheap knife won't get sharpened after using the Chef's choice sharpener so I concluded the knife must be junk and not worth keeping.

One of other interesting sharpener pushed by Amazon as I was browsing through cooking knives is the rolling sharpener, such as this https://www.amazon.com/dp/B0CJRF3S7T , has anybody experienced this, would it be better?
