I want something that can be used to sync my phone's photos and have all my media files for Plex. It should be able to handle 4k transcoding too. Along with file sharing for home network. But I also want some redundancy in place in case a drive fails.

Synology = software 10, hardware 5 (they give you the least amount of hardware ouf of the 3).
QNAP = Software 7, hardware 7 (this is a balance option).
ASUS = Software = 5, hardware = 9 (they give you the most hardware out of the group).
For today's world I like my NAS to have SSD for the OS/cache so it speeds it up. you have to remember these CPU in the NAS are trash, they need all the help they can get.
Synology has moved toward AMD for their latest round of product with the exception of the 423+, what that means is that you get no GPU transcode for plex. QNAP and ASUS is ok, in fact they even advertise about GPU transcoding on their NAS.
I don't recommend anything else besides these 3 company, it's just too much trouble. You can also do xpenology but it's a lot of work and trouble shooting hardware/software. USB drive on a small PC is also a no no for me. I had so many drives that got killed because USB is being stupid. I'm a cheap bastard and still fork up the money to get a QNAP. The QNAP 664 and 653D is a good choice for a balance setup with 6 drives. I would not go with any 2 drives unit, and 4 drive is the minimum. 6 is still decently price but once you step into the 8-10 bays it gets really expensive.
Do not buy older NAS, they have slower CPU/connection which isn't suitable for today's world. And people still ask an arm and leg for them. I got someone offering a 1812 synology for 500 bucks. Sure it's got 8 bays but that thing was 12 years old, it is super low.

Agree with most of this, not this last paragraph. I bought a used Synology ds415+ for $259 and it has worked beautifully for me. My main nass is a Synology ds418 play, and runs beautifully and transcodes Plex beautifully. Last time I checked eBay there was a guy selling one of these for 350 bucks which I think is a pretty fair price. The one thing I would caution with older Nas units is the lack of updates after a certain point. If I were buying a used Synology Nas, I would try to limit my range to something that can run DSM 7.2., which generally means models made in 2018 or later.
Personally, in your situation I would get an inexpensive. Synology Nas for the simplicity and the features like hyper backup and active backup for business, and get $150 mini PC with an n100 to have fun with docker and your containers. and if you get the mini PC, you don't have to worry about which processor the Nas is using because you can run Plex off the mini PC in the n100 will be great. just let the Nas be the nas and map your Plex server to a shared folder on your Nas.

I just bought a Ugreen 6 bay NAS on Kickstarter for $650. The hardware is phenomenal and comes with an I5 11th Gen processor. Software is like maybe a 2 right now, but am thinking of loading unraid or one of those. Will be looking for drives after the NAS arrives. Am keeping up with these threads right now so I know what is available.
The second one would not initialize. I even changed enclosures and got the same problem. In windows when given the option of MBR or GPT it errors out after choosing. I'm currently running minitool partition wizard on it.
I guess I'll get to see how supportive their customer support is.
