I have played Empire at War more than any other game on this list.
I would definitely give it another shot if you feel like refreshing the experience. I do it through steam, and you need the DLC for it to work. Awakening of the Rebellion really adds a lot of layers to the combat, which I quite enjoyed.

I have a soft spot for the Jedi Knight games, particularly Jedi Outcast and Jedi Academy. Dark Forces is great but has aged a bit and plays more like old school DOOM (Still great, I just understand that it might not be for everyone nowadays)

Empire at War with mods is great. The base game has aged a bit, though.
