The processes to make anhydrous versions of these primary ingredients is pretty harsh - hi-temp spraying of pulp free slurries into higher heat chambers to quickly create a powdered version of the original. You keep some of the flavors, little if any of the nutrients. Note the use of maltodextrin, sugar, dextrose, lactose - all types of sugar - helps add flavor (and other functions). Other ingredients are pretty benign but in reality, the finished product is just good tasting veggie sawdust. IMO....
