People still do because the nice restaurant food has aesthetic value. It is pleasurable and delights the senses. It has symbolic value (think of going out on a special occasion, or gifting yourself a watch on a special occasion, or giving your son a graduation present, etc.). Is it so crazy to spend $700 to give to your best man? Or to give your husband on an anniversary? Or to commemorate a job promotion?
For that matter, who in their right mind would spend money to go skiing, which is an entirely non-necessary activity? I dunno, maybe because they enjoy skiing, same as someone might enjoy watches for their historical relevance, for their craft, for the way the old-fashioned movement of springs and gears (and not batteries) can capture the imagination in a way that a battery powered digital device might not do in this day and age, for their artistry?
People go to NFL games when they can watch them on TV. I don't do it . . . but I can see why people would shell out that kind of money.
Who in their right mind would spend $2,000 a bicycle? I would never do it (I'm not into cycling). . . but I'm pretty sure I can figure out who in their right mind would. Is it really that difficult to think why it could make sense to do?

Hmm I'm a casual watch fan I thought the days of the 45+ were over. I'm 5'10 180 but my wrists were never all that thick. I found around 42 to be about right for me. Invicta was never all that good but all their 45 plus watches seem to always be on clearance now for 20-30 bucks.

I only wear an Apple Watch. It's convenient and useful. It has many features beyond telling the time. And I spent a good chunk of change on it.
But when I go to a formal or professional function dressed in a suit, and I see another man sporting a nice watch, I am simultaneously impressed and embarrassed. I feel like a child with a toy on my wrist.

For a more direct answer, this watch maker is popular in the "watch aficionado" circle for being a smaller independent brand doing interesting things and making their own movement or "engine" without being overpriced and being a well kept secret in the industry. Most solid time pieces are in the 1k - 5k range. At this range you will get good materials, great craftsmanship, historical legacy, and what defines a watch, how long it can tell time as accurate as possible. From the outside, a watch is just a watch. All you see is the bracelet and the watch face, but inside is an infinitely complex marvel of human engineering. Think of a 63 mustang, on the outside it's just a car. But a car guy will appreciate the finer detail inside the hood and engineering that make it special. This brand isn't attractive to me but others are. I'm a craftsman. I respect craftsmanship. Whether its a sailboat I'm cruising or racing or a watch I'm buying, if its important to me I'll pay for craftsmanship. Everyone scratches that itch different ways.
BTW cars do nothing for me, but I grew up in a 64-1/2 mustang. Good luck finding a 63 that isn't wood or clay.
