It's definitely different. Use caps-a-holic to see which you prefer. The Studio Canal has less sharpening and warmer colors (which supposedly are more true the original film's color grading). The US release has a more sharpened image and more neutral colors. I prefer the warmth of the UK release, but can see why people like the sharper US image and more neutral color grading. It mostly comes down to preference.

Can anyone who knows please share what if anything is different, in terms of digital movie quality, between the Steelbook 4K Bluray Edition in this Slickdeal and the other non-steelbook 4K Bluray on Amazon?

They are identical. Both US releases are the Sony version.
