Which one is best bang for the buck?
Looking at the price for SSD will always come down at some point, perhaps the 64GB RAM will be more future proof?

I've had both a base M1 Pro and more recently an M1 Max with 64GB. Even on the M1 Max, the fan only ever runs for sustained max loads

The graphics on M1 Max are faster, *if* we were talking about the 32-core version. But this offer is the 24 core version. And compared to M3 it also lacks ray tracing support.
Video decode / encode is also faster on M3 (although only the Max has 2 encode units? hard to find benchmarks) and anything earlier lacks AV1 support.
