As a reminder, since this laptop uses LPDDR5 there is no way to upgrade the memory. You'll be stuck with only 8gb, which is already the absolute minimum for a budget tier laptop now, let alone a few years down the road. It's also important to keep in mind that the igpu uses system memory since it doesn't have vram, so in reality this laptop has more like ~6gb of ram for system use.
The cpu in this laptop has 4 zen2 cores (two, soon to be three generations old) that have been node shrunk and have a new memory controller. When paired with the lpddr5 memory it should have somewhat better single core performance and power efficiency at low wattages compared to the old 5500u (6-core zen 2) you'll commonly find in ~$250 laptops, though multithreaded performance lags behind due to having two fewer cores. Overall, the 7520u is a budget tier cpu that mainly belongs in laptops $350 and under.
Acer doesn't list more detailed specs for the 1080p ips 60hz touchscreen display on this exact model, but one of the best buy answers indicates the brightness is 250nits. This is the bare minimum for even low tier laptops, this laptop is best suited to be used indoor in moderate light environments or lower. Assuming this laptop uses the same screen as in the Aspire 3 NX.KJZAA.003, it has a 45%ntsc (~62%srgb) coverage, which is once again rather poor. Colors will appear dull, washed out, and flat out wrong.
Ultimately, this laptop is a poor value for those who don't find a touchscreen to be a necessity. For those who truly need a touchscreen, and aren't willing to consider a refurbished laptop, this is an acceptable, though not fantastic, deal. If you're considering this laptop and live near a microcenter, I'd highly recommend you spend the extra $40 to get the Acer Aspire 3 A315-24PT-R1L8 with 16gb of lpddr5 ram and a 1tb ssd for $400: https://www.microcenter
Having 16gb instead of 8gb of ram should substantially extend the usable lifespan of the laptop, and the 1tb ssd is also a nice bonus.

What would be my options?
I need 300 nits at least
I can upgrade ram and ssd, as i have them laying around.
I dont mind weight: The more the less power throttled IMO.
USB C charging with video output is a must
15-16" screen.
Thanks.
