I have one and it works well in the car (for non overnight road trips). Not having to rely on ice is nice.
However, that is where the use case ends for me. Camping? Unless you have an electrical hookup (or want to leave it attached to your car....which can drain the battery), the cooler doesn't stay cold very long. Similarly, you may have to lug this into hotel rooms overnight to keep items cold. Beach? Nope. Sun will cook this thing without a battery powered option.
Taking a quick trip to the zoo or picnic? If hot outside, the internal temps increase quickly.
I think it's a great concept, which is why I bought one. However, it requires some additional creativity (creating an "always on inverter source in the car for example) to be useful overnight...and even then, it's a gamble if on the 12v car battery.
TLDR: application and vehicle dependent. Consider your use case, and buy/don't buy accordingly.
I decided on a 40L Bodega brand cooler that has 2 temperature zones for $250. Should make my vanmates happy on the upcoming Hood to Coast.

I have a 70qt cooler, and after I loaded it with ice and food I then took all the food and moved it to a 48qt cooler and it seemed to fit fine. Does that seem like a reasonable methodology to estimate a cooler to fridge conversion? Thanks

Power stations like Ecoflow river 2 pro/max @ 512-768Wh can power fridges like these for over a day or two without needing solar.. and solar is nice to have when grid power isn't immediately available. Pair that with an DC to DC (alternator) charger to be able to top off occasionally (while your car runs for a bit) without solar and you're golden.. of course you can power more than just a DC fridge with most options.

For longer term camping, if you need more storage, you could team up both - a big traditional cooler with ice packs, plus a smaller DC fridge.. rotate ice blocks into a good cold freezer section of a DC fridge with dual zone control. Redundancy is never a bad idea if you're going to be remote & you've got the space.
No risk of breaking, much easier storage when not in use, will last you PLENTY long for any basic trip, great even for when you go out grocery shopping on a hot day can put your cold items in them, etc.
These are way less practical than you think because they take a long time to prechill and the temperatures are not consistent.
